My family and I love leisurely breakfasts. It's great to cook something harder than oatmeal, set the table, make coffee and chat without looking at the clock (well, almost). I find breakfast recipes in books, on my favorite Instagram profiles, and I bring them from my travels. There is a bookmark, there is a bookmark - and now we have a decent collection. Now I will share two. To make shakshuka for the first time, of course, I was inspired by a trip to Israel, where it is so deliciously eaten in tiny cafes in the Tel Aviv market and trendy eateries with breakfasts 24/7. In fact, in our latitudes this dish is prepared very decently, and at home it is not a problem to repeat it. The main thing is to stock up on aromatic tomatoes.

And the second recipe is cheese cakes. But not simple ones, but with the most delicate curd cream, which makes them incredibly airy. I have not tried these in any institution (and I’m still a walker!). But since now all the best is in our own kitchens, we hone our skills and enjoy the pleasant routine.

Shakshuka

For 2 servings:

2 tbsp olive oil

2 onions, peeled and cut into half rings

1 pepper, cut into strips

200 g tomatoes in their own juice (you can take canned or fresh ones, but then you will need to peel them off)

200 g cherry tomatoes

4 eggs

2 cloves of garlic

2 tablespoons … water

1 tsp. ground pepper

1 tsp. coriander

chopped green onions and dill to taste

salt to taste

1 tsp honey

Heat olive oil in a skillet and sauté the onion, simmer for 5 minutes. Add peppers and tomatoes to your own juice. Simmer for another 10 minutes. If the tomatoes evaporate quickly, add water. Then put the cherry tomatoes, chopped in half, chopped garlic, pepper, coriander and honey in the same pan. Simmer for 10 minutes.

Make holes in the sauce and break the eggs into them. Leave the dish on low heat until the eggs are done, then add the herbs. Serve shakshuka with whole grain bread.

Cheesecakes with cottage cheese cream

For 3 servings:

300 g cottage cheese

30 g flour

100 g crême

40 g icing sugar

yolk

Combine cottage cheese and powdered sugar and grind with a fork. In a separate container, mix flour, cream cheese and yolk, add cottage cheese to them. Sculpt curd cakes on a floured surface. Fry in a dry skillet until golden brown on both sides. I like to sprinkle cheese cakes with powder before serving.

For 2 servings:

1 part oatmeal (not instant)

1 part nuts and seeds (I love the combination of almonds, cashews, and sunflower seeds)

1 part applesauce

2 egg whites

Spices to taste: cinnamon, nutmeg

Mix everything, put on a baking sheet on parchment in an even layer, bake in the oven at 160 ℃ for about 30 minutes. Stir every 7-10 minutes to prevent the granola from sticking together. Allow to cool, transfer to a glass jar. Serve with yogurt, fresh fruit and a spoonful of peanut butter.

You will need:

2 tbsp olive oil

3 eggs

150 ml milk

20 g grated cheese

lightly salted salmon

curd cheese

half an avocado

The recipe is so simple that there is nothing to tell. Heat the olive oil in a skillet, mix and salt the eggs and milk. Pour the mixture into a hot skillet, sprinkle with cheese and stir until tender.

Cut the salmon into thin strips, spread the curd cheese on the avocado and serve nicely with the omelet.

Banana Pancakes

You will need:

banana

250 ml milk

2 tsp sugar

2 tsp baking powder

egg

180 gr flour

2 tbsp. vegetable oil a

pinch of salt

Peel the banana and mash with a fork. Combine milk, butter, egg and sugar, beat with a mixer. Add banana puree, add flour, baking powder and stir again. Bake the pancakes in a dry skillet for 2 minutes on each side.

I make these pancakes every Saturday for breakfast - a tradition. The recipe is simple, the dough is kneaded in 10 minutes. And I fry them in two pans at once in order to speed up the process, because usually the family members dance around with impatience.

Sugar-free oat pancakes with apples

You will need:

2 st. oatmeal (I have minimal processing "Monastyrskaya")

2 tbsp. kefir (fermented baked milk, varenets - what can be found in the fridge)

1 ripe banana

1 large apple

Grind the oatmeal in a blender - but a little so that it still remains whole, not like flour. Sometimes I just soak the cereal without crushing it. So satiety lasts longer. Next, we send a banana with kefir to a blender - and pour the oatmeal with the resulting mixture. It should swell a little (enough time while you peel and cut the apple).

About the apple. We clean the skin and cut it into small squares. Stir into our dough. Our "batch" should not turn out too thick (and with oatmeal there is every chance for this). If you see that the dough is not dripping from the spoon, add more kefir.

Grease the pan with oil, bake pancakes over medium heat. Hot they are the tastiest!

The husband likes to add sour cream and honey to the pancakes, the son - jam. I like them on their own.
