Blogger and healthy eating expert Marika Kravtsova (@marikakravtsova) shares a recipe for vibrant beetroot pancakes that will surely set you in the mood for the day.
Breakfast
Pancakes with berry sauce

Pancake Ingredients: ⠀
Eggs - 2 pcs. Sugar - 2 tbsp. l. (you can taste) Salts - a pinch Soda - 1 tsp Flour (no proportions) Milk (warm) Vegetable oil - 1-2 tbsp. l Grated beets
Ingredients for the sauce:
Dried fruit (what is) - acts as a sweetener Frozen berries (what is) Agar-agar - 1 dl. ⠀
Preparation:
Beat eggs with sugar, salt and baking soda. Add sifted flour until dough is obtained. Dilute the dough with warm milk. add beets for burgundy color. Beat with a hand blender. For the sauce, grind dried fruits, heat frozen berries in a pan over medium heat. Add dried fruits to the berries, add agar-agar to the mixture, mix. Serve pancakes with berry sauce.
Snack
Toast with tomatoes and mozzarella

Fry the whole grain bread, thinly chop the mozzarella, tomatoes, sprinkle with rucola.
Dinner
Rice with shrimps and teriyaki sauce

Ingredients: ⠀
Shrimp - 400 g Red bell pepper - 1 pc Green onion - 100 g Teriyaki sauce Rice ⠀
Preparation: ⠀
Peel the shrimp, cut the vegetables into small pieces. Pour the sauce into a skillet over high heat and heat until bubbles appear. Add shrimp. While stirring, fry the shrimps without adding oil, without covering, for three minutes. Add vegetables to shrimp. While continuing to stir, fry over high heat for another 5 minutes. Add garnish.
Snack
Pumpkin balls

Ingredients:
Pecans / walnuts - ½ cup Oatmeal - ½ cup Dates (pitted) - 5 pieces Dried apricots - 5 pieces Coconut oil - 1 tbsp. l Thick pumpkin puree - ½ cup Maple syrup - 1 tbsp. l Sea salt - a pinch
Preparation:
Chop nuts, finely chop dried apricots and dates, mix with flour. Add coconut oil, maple syrup and pumpkin puree. Form into balls, refrigerate overnight.
Dinner
Fish salad

Ingredients:
Fish (salmon or catfish) - 200 g Pack of corn salad (or young spinach) Pomelo (peeled from films) - 1/3 piece Young asparagus - 100 g Young pea pods - 100 g
For refueling:
Olive Oil Aged Balsamic Vinegar
Preparation:
Chop the ingredients, season with olive oil mixed with balsamic vinegar.
