Ingredients for eggplant boats from the leading culinary section of the Good Morning program on Channel One by Diana Khodakovskaya:
- 3 eggplants
- 125 ml cream
- 100 g feta cheese
- Cherry tomatoes
- 1 egg
- 1 bell pepper
- 1 zucchini
- 1 onion
- 4 cloves of garlic
- a bunch of greens (parsley, dill)
- 30 g olive oil
- salt, pepper to taste
Cut the eggplant in half lengthways and gently scoop out the flesh with a spoon. Cut it into small cubes, salt. Then rinse the pulp under running water, squeeze and pat dry on a towel.
Peel the zucchini and onion and cut the vegetables into small cubes. Chop 2 garlic cloves. Fry chopped vegetables in a skillet in olive oil.
In a separate bowl, lightly beat the egg, pour in the cream, add the chopped cheese, sprinkle with salt and pepper. Pour the mixture over the fried vegetables and stir.
Fill the eggplant boats with the vegetable mixture and drizzle with olive oil.
Make cuts in the tomatoes and stuff with 2 minced garlic cloves. Place 4 cherry tomatoes on each eggplant boat.
Bake the eggplants in a preheated oven at 180 ° C until tender. Sprinkle with herbs before serving.
